Thai Chicken Noodles
How long it takes: About 8 minutes
What you need: 1 pan
In a medium pan, heat a tablespoon of oil. Once hot, fry the ginger, garlic and chill on a high heat for 1 minute, then add the chicken and lime leaves. Reduce the heat to medium and cook for a further 3 minutes, making sure the chicken is browned all over.
Add the park choi, bamboo shoots and carrots to the pan with a splash of water (1 tablespoon). Cook for two minutes or until the vegetables are slightly softened.
Add the noodles to the pan and pour the sachet of thai dressing in too.
Now add the cashew nuts and coriander to the pan. Stir thoroughly to combine all the ingredients and cook for 2 minutes. Ensure the chicken is cooked through.
