Peri Peri Chicken

How long it takes: About 8 minutes
What you need: 2 pans

  1. In a medium pan, heat a teaspoon of oil. Once hot, cook the chicken for 2 minutes, making sure it is browned all over. While the chicken is cooking, take a second pan (small-medium in size) and heat a tablespoon of oil on a medium heat.
  2. Now add the peri peri paste to the chicken pan, stir frying for 3 minutes. While this is stir frying for 3 minutes. While this is stir frying, add the peppers and spices from the spice sachet to the second pan, and fry for 2 minutes.
  3. Stir the tomatoes into the chicken pan and simmer for 3 minutes. Meanwhile, add the rice to the second pan and stir fry for 2 minutes until piping hot. Stir the sour cream through the chicken.
