How long it takes: About 8 minutes
What you need: 2 pans
- Boil a small pan of water and add a pinch of salt. In a medium pan, heat around a teaspoon of oil at a medium heat and cook the chicken until it is coloured (About 2 minutes).
- Now add the carrots and satay paste to the pan. Cook for a further 2 minutes, mixing regularly to avoid the sauce sticking to the pan.
- Pour the coconut milk into the pan and add the chilli too (if you like it with a bit of heat) and cook for 2 minutes, stirring regularly. Meanwhile, spoon the rice into the boiling water and cook for 2 minutes.
- Add the spring onion to the pan and squeeze in the lime. Stir well and cook for a final 2 minutes while draining the rice. Season to taste.
