BBQ Pulled Pork
How long it takes: About 10 minutes
What you need: 2 pans
- Boil a small pan of water and add a pinch of salt. In a medium pan, heat a tablespoon of oil. Cook the onion and courgettes on a high heat for two minutes, stirring continuously until they begin to soften.
- Add the contents of the spice sachet to the pan of vegetables, then add the black beans and tomatoes. Stir for 2 minutes to combine all the spices and ingredients together.
- Now stir the pulled pork into the pan, adding 100ml of water at the same time, along with as much or as little of the BBQ sauce as you like to taste. Adjust the heat so the dish simmers, and cook for 4 minutes. Meanwhile, add the rice to the pan of boiling water and cook for 2 minutes.
- Once cooked, drain the rice and season to taste.
